Apple Dapple Cake by Sue Guialtieri

3 eggs
 1 ¼ cups oil
 2 tsp vanilla
 2 cups sugar
 2 ¾ cups flour
 1 tsp baking soda
 1 tsp salt
 1 tsp ground cinnamon
 ¼ tsp nutmeg
 3 large apples, chopped and coated with flour
Ingredients for topping:
  cup butter
 1 cup brown sugar
 ¼ cup milk
 1 tsp vanilla
 
Directions
  • Prepare a Bundt pan–well greased with shortening–and set oven temperature to 350 degrees.
  • Beat 3 eggs well.
  • Add the oil, vanilla and sugar and beat well.
  • Sift together the dry ingredients (flour, baking soda, salt, cinnamon and nutmeg) and add.
  • Stir until well incorporated.
  • Fold in the flour-coated apples. (Batter will be stiff.)
  • Place in Bundt pan.
  • Bake approximately 70 minutes at 350 degrees. Be careful not to overbake.
  • While the cake is cooling, make the topping.
  • Mix all topping ingredients in a saucepan and boil for approximately 3 minutes.
  • Let the cake cool for approximately 10 minutes.
  • Remove cake from Bundt pan onto a round plate or flat surface.
  • Pour hot topping over cake, letting it drip down the sides.
