2 medium acorn squash
1 cup fresh or frozen cranberries, chopped
1 cup apple, cut into 1/4 inch cubes
¼ cup brown sugar, or to taste
3 tbsp melted butter
½ tsp grated orange peel
Directions
- Preheat oven to 350 degrees.
- Cut squash in half lengthwise, remove seeds.
- Place cut side down in a shallow greased baking pan.
- Bake 40 minutes.
- Turn cut side up.
- In a bowl, mix together remaining ingredients. Spoon into squash.
- Return to oven, bake 30 minutes or until squash is tender.
