Prepare a Bundt pan–well greased with shortening–and set oven temperature to 350 degrees.
Beat 3 eggs well. Add the oil, vanilla and sugar and beat well. Sift together the dry ingredients (flour, baking soda, salt, cinnamon and nutmeg) and add. Stir until well incorporated. Fold in the flour-coated apples. (Batter will be stiff.) Place in Bundt pan.
Bake approximately 70 minutes at 350 degrees. Be careful not to overbake.
While the cake is cooling, make the topping. Mix all topping ingredients in a saucepan and boil for approximately 3 minutes.
Let the cake cool for approximately 10 minutes. Remove cake from Bundt pan onto a round plate or flat surface. Pour hot topping over cake, letting it drip down the sides.
